CREAMY CORN, CHICKEN & RICE BAKE image

Number Of Ingredients 9

1-1/2 tsp chili powder
2 Tbsp butter, melted
2 can(s) (14.75 oz.ea.) sweet cream style corn
2 c shredded cheddar cheese
1/4 tsp dried oregano
1-1/2 lb boneless skinless chicken breasts, cut into strips
2 c instant white rice, uncooked
1/2 c onion, chopped
2 Tbsp italian parsley or cilantro, chopped

Steps:

  • 1. In a large bowl, stir together chili powder, oregano and butter. Add chicken and stir to coat.
  • 2. Add corn, rice, cheese, onion and parsley; stir to evenly combine all ingredients.
  • 3. Spread mixture into a 13x9" glass baking dish that has been sprayed with cooking spray.
  • 4. Bake in a preheated 350ยบ oven for 40-45 minutes, or until edges are bubbling and chicken is cooked. Let stand 5 minutes before serving.
