CREAMY BLUE CHEESE POLENTA image

3 cups water
2 cups low-fat (1%) milk
3/4 tsp salt
1/4 tsp pepper
1 cup instant polenta
2 oz. blue cheese, crumbled
2 tbsp grated parmesan

Steps:

  • Combine water, milk, salt and pepper in large saucepan; bring to boil over med-high heat. Pour the polenta into boiling liquid in steady slow stream, whisking constantly. Cook, stirring constantly, until the polenta is thick and creamy, about 5 min. Stir in blue cheese and parmesan until combined.
