CREAMED ZUCCHINI & MUSHROOMS image

Number Of Ingredients 5

2 lbs zucchini
1 lb sliced mushrooms
6 TB butter
4 TB flour
2 cups of sour cream

Steps:

  • Cut zucchini into 1" slices. Cover zucchini in boiling water. Simmer zucchini for 3 minutes. Strain zucchini reserving 4 TB of cooking liquid. Melt butter in a large sauce pan. Cook mushrooms in the butter until tender. Stir in flour. Cook flour and mushrooms on medium for 2 minutes. Add sour cream and zucchini to the mushroom mixture. Add 4 TB of cooking liquid. Stir together completely.
