Steps:
- Melt butter in heavy saucepan over medium heat then add flour and cook 5 minutes. Slowly stir in 1/2 cup whipping cream and season with salt, pepper, cayenne and nutmeg. Reduce heat and cook 30 minutes then remove from heat Preheat oven to 400 then grease 6 ramekins with butter. In separate pot bring 1 cup water to a boil then add a little salt and spinach. Cook 5 minutes then drain and stir spinach into sauce. Add 1/4 cup cream and egg yolks the stir well. Whisk egg whites to stiff peaks then carefully combine with spinach mixture. Avoid deflating foam as much as possible then distribute equally over ramekins Top each ramekin with small pieces of goat cheese and 1/2 teaspoon of pepper jelly Bake 20 minutes then serve immediately.
