Creamed Spinach image

Super quick and delicious. I love cream spinach and the homemade is so much richer and flavorful than the frozen stuff. Love it! You can use one (10 oz.) bag of fresh spinach. Just cook it in the pan with a little liquid until wilted, squeeze out all the liquid and continue with directions.

Number Of Ingredients 9

2 pkg (10 oz.) frozen chopped spinach, thawed and squeezed to remove excess liquid (i put it in a colander and use a potato masher to squeeze the water out.
1 clove garlic, minced
1 green onion, thinly sliced
2 Tbsp butter
1 Tbsp flour
1 c milk
pinch of nutmeg
salt to taste
pepper to taste

Steps:

  • 1. Melt butter in a pan, add garlic and onion, saute for a few seconds. Add flour and stir until well mixed.
  • 2. Pour in milk and stir over medium heat until thick and bubbly. Add nut meg, salt & pepper.
  • 3. Add spinach and stir until the spinach is no longer in clumps and is nicely mixed with white sauce. Serve.
