Creamed Potatoes for Dialysis Patients image

I love potatoes, but they are a no-no for us dialysis patients unless treated in a manner similar to this recipe. The butter and cream cheese are just fine if you are on dialysis. The addition of the sweet potato adds a little extra pift. You don't have to be on dialysis to enjoy these but they are a little high in fat. This method removes much of the potassium from the potatoes, which is what dialysis patients need.

3 large potatoes, peeled and cut into small cubes
1 medium sweet potato, peeled and cut into small cubes
2 ounces butter
100 g cream cheese, not diet
pepper

Steps:

  • Place the potatoes in a large bowl and cover with cold water. Immediately pour off the water and then cover the potatoes with cold water. Let them sit for an hour, then pour off the water, and repeat the process.
  • Drain the potatoes and place them in a large pot of salted water using enough water to cover.
  • Bring the water up to a boil and cook the potatoes for 30 minutes.
  • Drain the potatoes, place them in a large plastic bowl, and microwave for 3 minutes or so to get rid of as much water as possible.
  • Using your electric mixer beat the potatoes until a lump free puree is obtained.
  • Add the butter and the cream cheese along with the pepper and beat until all well blended.
  • Serve and enjoy.
