CREAM OF SHALLOT SOUP image

2 cups shallots
2 table spoons butter
1 litre chicken broth
1/2 cup heavy cream
3 egg yols

Steps:

  • Cut shallots in big pieces soften the butter and add the shallots to fry Add the chicken broth, boil then simmer for 20 min mix the heavy cream with egg yolks add the cream and egg mixture to chicken broth steer until it tickens
