CREAM OF CAULIFLOWER AND PARMESAN SOUP image

Number Of Ingredients 9

2 sm. or 1 average size head of cauliflower (broken into chunks)
2 shallots,chopped
1 1/2C heavy cream
1 1/2 C vegetarian chicken broth
1/3C parmesan cheese(grated, in the jar)
2TBS lemon juice
2TBS honey
1 TBS kosher salt
1/2 TBS ground pepper

Steps:

  • In a small pot: bring to a boil, broth,cream,shallots,cauliflower reduce to simmer until tender. puree with an emerson stick blender. add parmesan while blending. remove from heat and stir in lemon juice,honey, salt and pepper.
