CRAWFISH QUESO DIP image

Number Of Ingredients 14

2T butter
1/2 chopped scallion
(white part only)
1/4 chopped garlic
1lb diced tomatoes
4oz diced green chiles
3/4c beer(not dark)
1lb shredded white cheddar
4oz cream cheese, cut into pieces
1lb crawfish tails, rinsed and drained(chop if large)
1/2 cup scallions
(green part only)
tabasco
s&p

Steps:

  • heat butter in saucepan. saute garlic and onion 5 min or til tender.add tomato,chilies, and beer simmer 5 min reducing slightly.melt in cream cheese, then cheddar by 1/2cups stirring until completely melted and mixture bubbles. add crawfish, heat through .finish with remaining scallions.season with tabasco ,salt, and pepper
