Steps:
- Melt butter, add flour and stir until lightly cooked. Add onion, garlic, parsley and green onion. Cook over med. heat until onion is clear. Add crawfish and cook over low heat about 10 minutes. Add wine and simmer until blended. Slowly add cream and simmer over low fire. Do not let the mixture boil or it will curdle. Add seasonings to taste. Serve over rice, noodles or pastry shells. This can be made into a crawfish pie.
