Crash Hot Potatoes image

This is not my recipe; however, I couldn't resist sharing it! These look SOOO delicious! Friend of a friend on Facebook. I'll be making these for dinner this week!! My mind is going crazy with the variations! Bacon...top with sour cream and chives to serve...the list goes on!

Number Of Ingredients 6

baby red potatoes
olive oil
herbs and spices of choice
garlic
salt and pepper
parmesan cheese or other cheese per taste

Steps:

  • 1. Preheat oven to 450 degrees. Boil some baby potatoes until fork tender.
  • 2. Drizzle olive oil on a baking sheet, set potatoes on sheet and using a potato masher, gently smash each potato down, rotating masher both ways (so it looks like a thick cookie).
  • 3. Drizzle with olive oil, season with salt/pepper and sprinkle cut fresh herbs and garlic over each. Top with grated Parmesan cheese.
  • 4. Bake for 20 minutes. Should be crispy on the outside and still soft inside.
