CRANBERRY STREUSEL CORN MUFFINS image

Streusel:
6 T flour
1/3 c Splenda Brown Sugar
1/4 t. allspice
1/2 stick cold butter or margarine
Muffins:
1 c flour
1 c Polenta or Stone Ground cornmeal
1/2 c Splenda white
2 t. baking powder
1/2 t baking soda
1/2 t salt
3 beaten eggs
one 8 ounce fat free sour cream
3 T melted butter or canola oil
2 t vanilla
1/2 can whole cranberry sauce

Steps:

  • Combine dry streusel ingredients and cut in cold butter. Set aside for use on top of muffins. use all or half of streusel topping Combine dry batter ingredients and wet ingredients in separate bowls. Stir together untill just combined. In each muffin cup place 2T batter, top with 2 t canned whole-berry cranberry sauce, then streusel topping.
