CRANBERRY SAUCE WITH VANILLA BEAN AND CARDAMON image

1/4 tsp cardamon seeds, lightly crushed
1 vanilla bean, split lengthwise
1 12-oz [340 g] bag fresh cranberries
1 c sugar
1 c cranberry cocktail
1 strip fresh lemon zest
1/2 tsp sea salt

Steps:

  • Remove seeds from whole, green cardamon pods. Bring all ingredients to boil in heavy pot, stirring often. Reduce the heat to med-low and simmer until most of the cranberries burst, stirring occasionally, about 10 min. Cool completely. Remove the vanilla bean, scrape out the seeds and add them to the cranberry sauce. Cover and refrigerate.
