CRANBERRY PORT CONSERVE image

Number Of Ingredients 6

1 12 oz package of fresh or frozen cranberries
3/4 cup sugar (or a little less)
2/3 cup ruby port
1 med navel orange, unpeeled chopped fine
1/3 cup chopped walnuts
1/3 cup dried currants

Steps:

  • Combine cranberries, sugar and port in a heavy saucepan. Bring mixture to a boil over medium-high heat, stirring until sugar dissolves. Reduce heat to medium-low, add chopped orange and simmer until cranberries burst and mixture thickens slightly, about 15 minutes. Mix in dried currants. Cool cranberry conserve completely. Stir in walnuts. Can be prepared 3 days in advance. Cover tightly and refrigerate.
