Cranberry ~ Orange ~ Toasting Bread image

This is a recipe my Mom gave me, that my Gram used to always make, when she was a kid...This was my first time making it. I loved that it wasn't real sweet, and is best served toasted with butter. I didn't add nuts to mine, only because I was fresh out. You can make a glaze, as I did with one loaf, This bread would be great...

Number Of Ingredients 12

2 c flour + 1/2 tbsp for cranberries, unless using dried
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c sugar
1 egg ~ room temp
2 Tbsp melted, butter
1/2 c chopped nuts, ~ optional, i didn't use
1/2 c + 1 tablespoon - orange juice
1/3 - 1/4 c orange zest - to your liking
2 Tbsp warm water
1 c whole cranberries ( mine were froze ) i coated with flour ~ or can use dried

Steps:

  • 1. Preheat oven to 350 degree F. I used 3 mini loaf pans or can use a 9 x 5 loaf pan. Spray with non stick cooking spray.
  • 2. In a large bowl, mix the dry ingredients. Add all other ingredients and stir only until all dry ingredients are blended well. I added my cranberries now too, you can always wait and fold them and nuts in last.
  • 3. Spoon batter into prepared pan or pans, evenly. Batter will be thick. Bake in 9 x 13 for 50 - 55 minutes or mini pans for 30 - 35 minutes or until pick comes out clean.
  • 4. When done, place on cooling rack for a few minutes, then if you like remove from pan and finish cooling.
