CRANBERRY ORANGE BUTTERMILK MUFFINS image

2 3/4 C. all purpose flour
1/4 tsp. salt
2 1/2 tsp. baking powder
1/2 Tbsp. baking soda
1/2 Tbsp. ground cinnamon
1 Tbsp. unsalted butter
1 C. finely chopped walnuts
1/3 C. brown sugar
1/2 C. vegetable oil
1 egg
2 tsp. vanilla
1 C. buttermilk
juice and zest of 1 orange
1 3/4 C. chopped cranberries

Steps:

  • Mix dry ingredients, make topping using a fork. Blend wet ingredients saving cranberries. Blend wet and dry ingredients well, fold in fruit. Spray muffin pans. Fill to top and add topping. Bake at 400 degrees for 15 minutes, then turn down to 350 degrees. Bake another 12-15 minutes. Cool 5 minutes, then take out to cool.
