Cranberry Nut Muffins image

I can always be impressed by anything with cranberries in it and this is no exception, I love these muffins for breakfast -

Number Of Ingredients 10

3/4 cup Miracle Whip
1 1/4 cups orange juice concentrate, undiluted
2 eggs, beaten
2 cups fresh cranberries or 2 cups frozen cranberries
2 cups flour
3/4 cup sugar
1/2 cup chopped nuts
2 teaspoons orange rind
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Combine Miracle Whip, orange juice, eggs and cranberries.
  • In a separate bowl, combine remaining ingredients.
  • Stir wet mixture into dry ingredients. Fill greased muffin cups. Bake at 350F for 20-25 minutes. Let stand for 10 minutes. Remove from pan.
