CRANBERRY MANGO CHUTNEY image

Yield 2 1/2cups

Number Of Ingredients 8

2 mangoes
1 small onion
1 small red pepper
2 tsp oil
1 cup frozen cranberries
1/2 cup or less brown sugar
2 tbsp apple-cider vinegar
2 tbsp finely chopped fresh ginger

Steps:

  • Finely dice mangoes, onion and pepper. Heat oil in large saucepan over med low. Wehn hot add onion and pepper. Cook stirring occasionally 5-7 mins or until softened Add mangoes, cranberries, sugar, vinegar and ginger. Reduce heat to me low. Stir often gently mashing cranberries for 30 mins or until softened and chutney has a cranberry sauce like texture.
