Cranberry Cookie Bars ~ image

Always looking for more recipes for Cranberries !!! Found this one in my Cape Cod cookbook. It is very good ! I only had a 13 1/2 by 9 1/2 inch glass baking pan, sooo they would be thicker in a regular 13x9" pan. Hope you enjoy ~ could try using other fruits, such as blueberries which is what I am going to try next time I make this !

Number Of Ingredients 10

1 1/2 cup(s) sifted all purpose flour (sift before measuriing)
1 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 cup(s) butter or margarine
1 cup(s) granulated sugar
1/2 cup(s) brown sugar (packed)
2 - eggs
1 teaspoon(s) vanilla ( iused almond extract)
1 cup(s) fresh or frozen cranberries, chopped
1/2 cup(s) walnuts or pecans (optional)

Steps:

  • Preheat oven to 350 degrees Grease a 9 X 13 inch pan.
  • In a bowl sift together sifted flour, baking powder and salt. (Yes sift the flour before measuring it)
  • In a second bowl , cream butter and both sugars. Add eggs one at a time, beating until fluffy. Add vanilla. (or almond flavoring)
  • Blend in dry ingredients. Stir in chopped cranberries and nuts. Spread in greased pan.
  • Bake 30 minutes. When cool, cut into bars. Do not overbake ( Mine only took 24 minutes) because of the amount of sugar, cookie dough tends to become hard and stick to the pan if overbaked.
