CRANBERRY CHEESE PIE image

I found this recipe in one of my cook-books that I go to frequently...hope you like it....it's very good...

Number Of Ingredients 14

1 10 inch pie shell, (your own, or a mix)
1 8 oz cream cheese, softened
1 large egg
1/2 c icing sugar/powdered sugar
1 11 oz sweetened condensed milk
1/4 c lemon juice, fresh or bottled
2 Tbsp cornstarch
1 14 oz canned whole cranberry sauce
2/3 c all-purpose flour
1/3 c brown sugar, packed
1/4 tsp cinnamon
1/4 tsp salt
1/4 c butter, cold
1/2 c chopped pecans or walnuts, (optional)

Steps:

  • 1. CRUST: roll out pie crust to line a 10 inch pie plate, if you don't have a 10 inch, use a 9 inch pie plate...However, if you use the 9 inch pie plate, be sure to put your pie onto a cookie sheet when you put it in the oven to catch any boil-overs...
  • 2. FIRST FILLING LAYER: Beat cream cheese, egg and icing sugar/powdered sugar ... Beat...and then spread in bottom of the pie shell...
  • 3. SECOND FILLING LAYER: Stir cornstarch into cranberry sauce in small bowl...Spoon over the first filling layer...
  • 4. TOPPING: Mix flour, sugar,cinnamon and salt in a bowl...Cut in butter until mixture is crumbly...
  • 5. Stir in pecans, (or walnuts)...Sprinkle over the second filling layer... Bake in a pre-heated oven at 375 degrees for 45 - 55 minutes until set and lightly browned...(lay a piece of foil over pie if topping is getting too brown) This recipe makes 1 pie...hope you like it....
