CRANBERRY CAKE WITH BUTTER SAUCE image

2-1/4 C. fresh cranberries (1 bag) coarsely ground
2 eggs
3/4 C. sugar
3/4 C. molasses
2-1/4 C. flour
3/4 t. salt
3 t. soda
3/4 C. hot water
Sauce:
1-1/2 C. sugar
3/4 C. whipping cream
3/4 C. butter
1-1/2 t. vanilla

Steps:

  • Cake: Combine eggs, sugar, molasses. In separate bowl combine flour, salt, soda. Add dry ingredient mixture to wet mixture. Add hot water. Add cranberries. Bake in greased 9"x13" pan for 35 min. @ 350. Sauce: Combine all ingredients and let come to a boil - don't cook. Serve warm over cake.
