Cracker Brownies image

My kind of Brownie ;-)

Number Of Ingredients 10

3/4 cup(s) shortening
1 cup(s) sugar
2 large eggs
1 teaspoon(s) vanilla extract
2 1/2 cup(s) crushed graham crackers
2 cup(s) mini marshmallows
1/4 cup(s) peanuts,ground fine
TOPPING
1 cup(s) semisweet chocolate chips
1/4 cup(s) peanut butter

Steps:

  • Lightly grease a 9-inch square pan. In the top of a double boiler, melt the shortening with the sugar. Stir to dissolve the sugar. Remove from heat and beat in the eggs one at a time. Beat in vanilla. Return to the heat and cook, stirring, until the mixture thickens. Remove from heat and stir in the graham crackers, marshmallows, and peanuts.
  • Spread mixture evenly in the pan. Refrigerate until chilled. For the topping, Melt the chocolate chips with the peanut butter in a double boiler over low heat, stirring constantly. Spread over the top of brownies. Refrigerate until set.
