CRAB STUFFED WONTON CUPS image

Number Of Ingredients 18

For wonton cups:
Cooking spray
18 Wonton wrappers, thawed
2 tsp canola oil
Kosher salt
For Dressing:
2 tbsp fresh lime juice
1 tsp grated lime zest
Kosher salt
Pepper
1/2 tsp red pepper flakes
2 tbsp EVOO
For salad:
1/2 lb lump crab meat
1 rib celery, finely diced about 1/4 c
1/2c peeled and finely diced mango
1/4c thinly sliced scallion (white and green part)
2 tbsp chopped parsley

Steps:

  • Heat oven to 375 and coat muffin tin with spray. Brush both sides of wrappers with canola oil and place into tin. Sprinkle with salt and bake 8-10 min. Whisk lime juice and zest, salt, black pepper, and red pepper. Add evoo and whisk until combined. Gently toss crab, celery, mango, scallions, and parsley. Add dressing, gently toss, and fill cups immediately.
