Cowboy Meatloaf image

Meal prep for the week with a pantry staple-Cowboy Meatloaf. This easy Cowboy Meatloaf is also the simplest. Complete it with an egg, some onions and peppers and a tangy BBQ sauce glaze. Serve it up alongside mashed potatoes and seasonal veggies!

1/2 cup BULL'S-EYE Original Barbecue Sauce, divided
1 lb. lean ground beef
1/3 cup finely crushed saltine crackers
1/4 cup each finely chopped green peppers and onions
1 egg

Steps:

  • Heat oven to 375ºF.
  • Reserve 1/4 cup barbecue sauce for later use. Mix remaining barbecue sauce with remaining ingredients just until blended.
  • Shape into loaf in shallow pan sprayed with cooking spray.
  • Bake 20 min. Spread with reserved barbecue sauce; bake 20 min. or until meatloaf is done (160ºF). Let stand 5 min. before slicing to serve.
