HAVE NO IDEA WHERE THIS RECIPE ORIGINATED. MY HUSBAND LOVES THIS WHEN FRESH CORN IS NOT AVAILABLE IN OUR AREA.

1 can(s) 15 oz cream corn
1 can(s) 15 oz whole corn kernels, undrained
2 eggs, beaten
2 Tbsp sugar
1/3 c cornbread mix from package
1/4 c butter, melted
2 jalapeno peppers, stemmed, seeded and finely minced
1 c mexican blend or cheddar shredded cheese, divided

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES.
  • 2. STIR TOGETHER IN A BOWL THE EGGS [BEATEN] CORN, SUGAR, CORNBREAD MIX, MELTED BUTTER, AND 1/2 CUP CHEESE.
  • 3. TRANSFER THE MIXTURE TO A BUTTERED 8X8 INCH BAKING DISH.
  • 4. BAKE 40 MINUTES, REMOVE FROM OVEN, SPRINKLE REMAINING 1/2 CUP CHEESE ON TOP. RETURN TO OVEN AND BAKE FOR ANOTHER 20 MINUTES.
  • 5. ALLOW TO COOL FOR 5 MINUTES BEFORE SERVING.
