Country Style Tomatoes image

Number Of Ingredients 12

4 large tomatoes
1 pkg (8oz) cream cheese room temperature
1/4 c minced fresh parsley
1 1/2 tsp minced fresh basil or 1/2 teaspoon dried basil
1 clove garlic...minced
1/4 tsp salt
1/4 c flour
1 c panko(japanese) bread crumbs
1 large egg
1 Tbsp milk
3 Tbsp butter
3 Tbsp olive oil

Steps:

  • 1. Cut each tomato into 4 thick slices,place on paper towels to drain.
  • 2. Meanwhile, in a small bowl,beat the cream cheese,parsley,basil,and salt,until well blended. Spread cream cheese mixture over eight tomato slices,top with remaining tomato slices.
  • 3. Place flour and bread crumbs in separate bowls. In another bowl,whisk egg and milk. Coat the top and bottom of each sandwich with flour,dip in egg mixture,then coat in crumbs
  • 4. In a large skillet,heat butter and oil over medium high heat. Fry tomato sandwiches in batches for 3-4 minutes on each side or until golden brown. Drain on paper towels. Serve immediately.
