Country Style Green Beans, Ham & New Potatoes image

Everyone has their own recipe for cooking fresh green beans and this is mine. It's a little kicked up and a lot delicious. I know you'll love it.

1 large bunch of fresh green beans, cleaned and snapped
1 large onion, halved and sliced thin
1 bunch green onions, sliced thin
1 medium green bell pepper, chopped
1 Tbsp bacon grease
3-4 c chicken stock
1/4 c beer (or more to taste)
1/2 lb ham seasoning
1 Tbsp dried parsley
1-2 tsp creole seasoning
1 Tbsp fresh ground black pepper
1 tsp salt
8-10 small new potatoes, washed

Steps:

  • 1. In a large soup pot add all ingredients except potatoes - heat over medium heat until it comes to a boil. You want to have enough liquid to just barely cover the beans. Reduce heat and simmer another 2 - 3 hours.
  • 2. Check for seasoning and adjust as needed. If it tastes a little salty it's OK, the potatoes will soak some of that up. The beans should be very tender and beginning to fall apart.
  • 3. Add the new potatoes and push them down into the beans so that they're covered with liquid. If more liquid is needed add more chicken stock or water.
  • 4. Raise heat to medium and bring liquid to a boil - cover and boil for 20 minutes or until potatoes are done. Taste again and adjust seasoning as needed. Enjoy!
  • 5. NOTES: The beer and the bacon grease make all the difference in the taste so don't leave that out.
