Number Of Ingredients 9

2 tablespoons olive oil
1 medium onion, diced
3 cups leftover venison roast, chopped
4 - 5 medium potatoes, diced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 1/2 cups milk
3/4 cup Italian bread crumbs
6 large eggs

Steps:

  • Heat olive oil in large skillet; add onion, venison roast, potatoes, salt and pepper. Cook, uncovered, over medium heat 20 minutes, turning frequently, until potatoes are cooked through. Drain. Reduce heat, then break eggs over hash mixture; cover. Cook additional 2-3 minutes, or until eggs reach desired degree of doneness.
