Country Dijon Sausage Pie image

Number Of Ingredients 9

1 lb italian sausage, sweet
1 medium onion, chopped
1 medium garlic cloves, crushed
10 oz fresh spinach
1/4 tsp oregano
5 eggs, beaten slichtly
1/2 c country dijon mustard
2 9-inch pie crusts
1/4 c parmesan cheese, grated

Steps:

  • 1. In large skillet, cook sausage, onion and garlic until sausage is crumbly.
  • 2. Drain, reserving 1 tablespoon drippings.
  • 3. Place mixture in large mixing bowl.
  • 4. To drippings in skillet, add spinach.
  • 5. Cook, covered, 2 minutes or until wilted.
  • 6. Cool slightly.
  • 7. Chop.
  • 8. Add to sausage mixture.
  • 9. Mix in oregano, eggs and mustard.
  • 10. Pour in pastry-lined pie shell.
  • 11. Sprinkle with cheese.
  • 12. Top with pastry.
  • 13. Cut vents.
  • 14. Bake in preheated 400 oven 35 minutes or until browned.
