Cottage Meatloaf image

my momma's recipe

Number Of Ingredients 16

..meatloaf..
1 1/2 lb lean ground beef
1/2 c ketchup
1/3 c tomato juice
1/2 tsp salt&pepper (each)
1/8 tsp crushed red pepper
2 eggs, beaten
3/4 c fresh bread crumbs
1/4 c finely chopped onions
2 tsp mustard
aluminum foil (to line pan)
..topping..
1/4 c ketchup
1/2 c mustard
2 tsp brown sugar
fresh herb for garnish (optional)

Steps:

  • 1. preheat oven to 400 degrees.
  • 2. in a large bowl, combine ketchup, tomato juice, salt, pepper, red pepper, eggs, onions and mustard. Mix until throughly blended.
  • 3. Mix bread crumbs and ground beef.
  • 4. Add beef to liquid mixture, mix gently, but throughly.
  • 5. line a 9x5 inch loaf pan with aluminum foil. press meat mixture into pan.
  • 6. Mix topping ingredients together in separate bowl; spread on top of meat.
  • 7. Bake at 400 degrees for about 35-40 minutes.
  • 8. Drain off fat and allow to sit 5 minutes before serving. Garnish with fresh herbs, if desired.
