Cottage Cheese Baked Potato image

This sounds crazy, but tastes great. A friend of mine told me about it and I thought she was nuts. Try it! You'll like it!!

Number Of Ingredients 5

large russet potatoes
- cottage cheese of choice
- shredded cheddar cheese
- salt and pepper
- butter

Steps:

  • Rub potato with a small amount of shortening. Sprinkle with salt. Bake russet potato in oven til tender...I also use the microwave if I'm in a hurry.
  • Split potato open and slather on the goodies. I put the butter and cheddar cheese on first and melt them before adding the cottage cheese. Top it off with salt and pepper to taste.
  • Enjoy! Enjoy! Enjoy!
