Corn Fritters image

Quick and easy way to use up left over corn or especially good using fresh off the cob corn.

3 c oil for frying
1 c all purpose flour
1 tsp baking powder
1/2 tsp salt (or less to taste)
1-3 tsp sugar (based on how sweet you like your fritters)
1 egg, beaten lightly
1/2 c milk
1 Tbsp butter, melted
2 ml ears of corn, kernels cut off or a 12 ounce can/bag of frozen corn
honey for drizzling on finished fritters, optional

Steps:

  • 1. In a deep frying pan, heat a couple Inches of oil to 365.
  • 2. In a medium bowl, combine all ingredients until just mixed.
  • 3. Drop batter by teaspoon-tablespoonfuls into hot oil. Allow to fry until golden on one side then turn to cook other side. Roughly 2 minutes on each side. Tip: a chopstick makes a great tool for turning the fritters.
  • 4. Drain on paper towels and drizzle with a little honey. Serve warm.
