Quick and easy way to use up left over corn or especially good using fresh off the cob corn.

Steps:
- 1. In a deep frying pan, heat a couple Inches of oil to 365.
- 2. In a medium bowl, combine all ingredients until just mixed.
- 3. Drop batter by teaspoon-tablespoonfuls into hot oil. Allow to fry until golden on one side then turn to cook other side. Roughly 2 minutes on each side. Tip: a chopstick makes a great tool for turning the fritters.
- 4. Drain on paper towels and drizzle with a little honey. Serve warm.
