COOL CURRY CHICKEN image

1/2 C butter
1 C honey
1/2 C dijon mustard
4 T prepared mustard
2T curry powder
1 lime, juice & rind finely grated
1 tsp salt
2 clove garlic
6-8 half breasts chicken, boned and cut into bite-sized pieces

Steps:

  • Preheat oven to 350deg. Arrange chicken pieces in one layer in pyrex baking dish In a metal saucepan, combine remaining ingredients and bring to a boil. Remove from heat & pour over chicken. Bake for about 20 min, covered, until bubbling and chicken cooked.
