Confetti Salad image

Number Of Ingredients 19

FOR THE SALAD:
3 cups lightly packed chopped curly lettuce
1 cup finely chopped Italian chicory (radicchio)
1 cup finely diced red bell pepper
1 cup finely diced green pepper
1 cup finely diced fennel bulb
1 cup finely diced carrot
1 cup finely diced celery
1 cup finely diced seedless cucumber
1/2 cup finely diced red onion
1/4 cup finely chopped fresh dill, divided
2 tablespoons finely chopped fresh mint leaves, divided
FOR THE DRESSING:
6 tablespoons extra-virgin olive oil
1/4 cup fresh lemon juice
1 teaspoon kosher salt
1/2 teaspoon minced garlic
1/4 tablespoon freshly ground black pepper
4 ounces ricotta cheese, crumbled

Steps:

  • TO MAKE THE SALAD: In a large bowl combine the salad ingredients, including half of the dill and half of the mint.TO MAKE THE DRESSING: In a small bowl whisk together the dressing ingredients, along with the remaining dill and mint.Pour the dressing over the salad and toss to combine.
