Steps:
- 1. In a mediun sauce pan with a tight fitting lid, combine rice, broth and salt.
- 2. Bring to a boil and stir once.
- 3. Cover and reduce heat to low.
- 4. Simmer for 18 minutes. DO NOT lift the lid or stir.
- 5. Remove from heat and let stand covered for 5 minutes.
- 6. Add the peas, peppers, and carrots. Stir with a fork to fluff.
- 7. Serve immediately.
