Confetti Rice image

This goes great with pork chops, chicken and beef. It adds a little vegetables to your meal and makes the plate looks prettier.

Number Of Ingredients 6

1 c uncooked , long grain rice
1 1/2 c chicken broth
1/2 tsp kosher salt
1/2 c cooked green peas
1/2 c cooked, diced carrots
1/4 c cooked, diced red bell pepper

Steps:

  • 1. In a mediun sauce pan with a tight fitting lid, combine rice, broth and salt.
  • 2. Bring to a boil and stir once.
  • 3. Cover and reduce heat to low.
  • 4. Simmer for 18 minutes. DO NOT lift the lid or stir.
  • 5. Remove from heat and let stand covered for 5 minutes.
  • 6. Add the peas, peppers, and carrots. Stir with a fork to fluff.
  • 7. Serve immediately.
