"Fix and Forget it" recipe for a moist chicken and rice. The chicken was tender and delicious, but I'm a sucker for this sticky rice :) Recipe from Grace Turner of Marvell, Arkansas

1 large fryer, cut up
1 cup uncooked rice
1 (10 3/4 ounce) can cream of chicken soup
1 (10 3/4 ounce) can cream of celery soup
1 teaspoon salt
2 cups water
1 (4 ounce) can chopped mixed mushrooms, drained
3 tablespoons melted butter

Steps:

  • Place rice in buttered casserole with a small amount of the water. Combine soups, salt, remaining water and mushrooms. Pour over rice. Dip chicken pieces in butter and lay on top of soups. Bake at 275 for 2 1/2 hours.
