COLORADO PEACH PIE image

Crust:
1/2 cup butter
1 1/2 cup flour
1/2 tsp. salt
Filling:
4 cups fresh peaches
1 cup sugar divided
2 tbsp flour
1 egg
1/4 tsp. salt
1/2 tsp. vanilla
1 cup sour cream
Topping:
1/3 cup sugar
1/4 cup butter
1/3 cup flour
1 tsp. cinnamon

Steps:

  • Crust: Combine ingredients and press into a 10 inch pie pan (deep pan) Filling: Peal and dice peaches. Place in a bowl and sprinkle with 1/4 cup sugar and let stand. Combine 3/4 cup sugar and all other ingredients. Fold in sour cream. Stir into peaches and pour into crust. Bake 400F 15 mins. Then 350F 20 mins. Remove and add sprinkle topping on the pie. Bake at 400F for another 10 mins. Cool and enjoy!
