Number Of Ingredients 6

3/4 of a small head of cabbage, sliced as thinly as possible
5 ounces olive oil (extra virgin preferred)
4 ounces red wine vinegar
Juice of 1 lemon
Salt and freshly ground pepper to taste
1/2 cup chopped fresh parsley

Steps:

  • Place the sliced cabbage in a large mixing bowl.
  • Combine the remaining ingredients, and blend thoroughly. Season to taste. Pour over cabbage, and toss well.
