Cold Cucumber Soup image

This is my mom's recipe. I remember enjoying this in the summers, sitting in our screened porch in Minnesota. Great appetizer for lunch or dinner.

Number Of Ingredients 4

1 large cucumber
8 oz sour cream
1 can(s) cream of chicken soup
1/2 c milk

Steps:

  • 1. Peel and remove seeds from cucumber. Dice cucumber. In blender, blend until smooth.
  • 2. Blend remaining ingredients. Salt and pepper to taste. Chill.
  • 3. Serve in chilled mugs. Garnish with fresh dill. Great to serve on hot summer evening on patio before dinner.
