Coffee Toffee Pie image

Toffee, chocolate, and a hint of coffee flavor. My favorite things all in one pie.

PRESS IN PASTRY
1 c all purpose flour
1/2 tsp salt
1/3 c shortening
1/4 c packed brown sugar
4 Tbsp ice water
3/4 c chopped walnuts
FILLING
1/2 c soft butter
3/4 c sugar
1 oz one square, unsweetened chocolate, melted
2 tsp instant coffee granules
2 large eggs
TOPPING
2 c whipping cream
2 tsp instant coffee granules
1/2 c powdered sugar
grated chocolate for garnish

Steps:

  • 1. Preheat oven to 375 degrees To prepare pastry In mixing bowl, combine flour and salt. Cur in shortening until mixture resembles coarse crumbs Blend in the brown sugar, Add ice water. Toss until dough is evenly moist. Blend in the walnuts. Press into 9 inch pie pan Bake for 15 mins or until golden, cool
  • 2. In mixing bowl, cream butter and sugar until light;. add chocolate, coffee granules and eggs, and beat until fluffy, about 2 minutes. Turn into pastry shell, and chill overnight.
  • 3. Before serving, whip cream with instant coffee and powdered sugar. Spread or pipe mixture onto filling. sprinkle with grated chocolate and chill 2 hours.
