Coffee Mesquite Marinated Steak image

I made this during my brief hiatus from Just a pinch. Without a doubt the most flavorful steak I've ever made...I served it atop Roasted red pepper risotto. And topped it, with Buttermil-Tumeric onion straws. And balsamic reduction. This is the headlining picture in my portfolio, and for good reason. I hope you all enjoy!!

MESQUITE SPICE RUB
1/2 tsp kosher salt
1/2 tsp pepper
1/2 tsp chipotle chili powder
1/2 tsp onion powder
1/4 tsp garlic powder
1/4 tsp ground sage
1/8 tsp cayenne pepper
1/4 tsp ground mustard
1/4 tsp pimenton (smoked paprika)
WET INGREDIENTS
brewed coffee (black)
1 Tbsp white vinegar
1 8-12oz sirloin steak

Steps:

  • 1. If you have a Mesquite spice blend you know and love, (McCormick, Lawrys, etc...) Use that! This one is just one I particularly like :) Mix together spices until thoroughly combined. Then add the vinegar and enough brewed coffee to make a thickish mixture, Not too much that its all liquid, You'll know the right consistency
  • 2. Rub the mixture on the steak and allow to marinate for at least 4 hours. Overnight preferred
  • 3. Grill until desired internal done-ness and enjoy! (It goes really well with balsamic reduction, I promise!)
