COD WITH ORANGE SAUCE image

Number Of Ingredients 7

2 (4 - 5 ounce cod fillets, about 3/4 inch thick
1/4 teaspoon chili powder
1/8 teaspoon ground cumin
Salt and pepper to taste
1 tablespoon canola oil
1/3 cup fresh orange juice
1 tablespoon butter

Steps:

  • Pat cod dry. Combine chili powder and cumin on a plate. Gently pat spices onto cod lightly coating. Lightly season fish with ssalt and pepper. Heat oil in small to medium size heavy-bottom skillet. Ease cod into skillet. Cook over medium-high heat for 3 minutes. Gently turn over and cook another 3 minutes or until fish is cooked through to center. Remove cod to a plate and keep warm. Pour orange juice into skillet and scrape up any browned bits. Reduce heat to low. Add butter and swirl in to melt. Taste and season with salt and pepper if desired. Spoon orange sauce over cod. Service immediately.
