Cod Fish Fritters image

1/2 pound Salted Cod Fish
1 Egg, spearated
1/4 cup Milk
1/2 cup Flour
1/2 teaspoon Baking Powder
1 Onion, minced
1/4 cup Green Onions, chopped
1 Pimento or Jalapeno, finely chopped
1/4 teaspoon Salt
1/4 teaspoon Pepper
1 cup Vegetable Oil

Steps:

  • Put the prepared cod in a pot of fresh cold water, bring to a boil and simmer until it flakes at the touch of a fork, about 5 minutes. Drain, cool, remove any bones and place in the food processor.
  • Whisk the egg yolk and milk together with a fork.
  • Sift in the flour and backing powder and mix tot a paste.
  • Add this to the food processor with the fish and pulse 1 minute until pasty and shredded.
  • Stir in onions, chives and hot pepper.
  • Beat egg white to peaks and fold it in.
  • Heat oil in deep pot until a piece of batter droppedin sizzles instantly. Fry a small piece and taste. Adjust seasoning as necessary.
  • Fry a few at a time until dark golden, crisp and light. About 3 minutes.
  • Drain on paper towel.
