This dessert recipe is a variation of Vanilla Slice, a popular custard-like dessert from Australia. Many various fruit versions are easily found now, and this coconut version is a little more cake-like than custard-based, but it's quite easy to prepare and delicious.

Steps:
- 1. Preheat oven to 350°F (180°C). Lightly butter a 9-inch square baking dish; set aside.
- 2. In a bowl, mix together the flour, salt, sugar, coconut and melted butter. Stir in beaten eggs, milk and vanilla.
- 3. Spread mixture into prepared baking dish, and bake for 25 to 30 minutes. Let cool slightly before icing.
- 4. Toward the end of the baking time, prepare the icing: In a large mixing bowl, stir together the sugar and butter. Pour in just enough boiling water to make a thick paste. Add enough food coloring to tint the icing a soft pink. (The icing will harden a little if it sits too long, so it's best to frost the dessert while it's still warm as it's easier to spread.)
- 5. Frost the cooled dessert with the icing, and sprinkle coconut on top.
