COCONUT-PECAN PIE image

3 eggs
1 1/2 cups sugar
1/2 cup margarine
2 tsp lemon juice
1 tsp vanilla extract
1 cup flaked coconut
3/4 cup coarsely chopped pecans

Steps:

  • Preheat oven to 350. Beat eggs. Add sugar, butter, lemon juice, and vanilla. Mix well. Stir in coconut and pecans. Pour into 9" pie shell. Bake 45-50 min. Cool completely and store in fridge.
