Coconut Filled Chocolate Cookies image

1/2 cup(s) butter, softened
1 cup(s) powdered sugar
1 - egg
1 teaspoon(s) vanilla
1 1/4 cup(s) all purpose flour
1/3 cup(s) unsweetened cocoa
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
- coconut filling (below)
FOR THE COCONUT FILLING
1 package(s) 3 ounces cream cheese, softened
1/3 cup(s) sugar
2 tablespoon(s) flour
1 teaspoon(s) vanilla
1 cup(s) flaked or grated fresh coconut
1/2 cup(s) chopped nuts (optional)

Steps:

  • Prepare Coconut Filling: Beat cream cheese and sugar in small mixer bowl until creamy; add flour and vanilla. Stir in coconut and nuts. Cover and chill.
  • Cream butter, powdered sugar, egg, and vanilla in small mixer bowl. Combine flour, cocoa, baking soda, and salt; blend into creamed mixture. Cover and chill 20 minutes.
  • Divide dough in half; roll each half between wax paper into a 7x4 1/2 inch rectangle. Shape half the chilled filling into 7 inch long roll; place lengthwise on one rectangle of dough. Wrap dough around filling, sealing the long edge. Repeat procedure with remaining filling and dough. Wrap rolls tightly in wax paper; chill several hours or overnight.
  • Cut each roll into 1/4 inch slices. Place slices on lightly greased cookie sheet. Bake at 375 for 8-10 minutes or until almost set. Cool slightly. Remove from cookie sheet; cool completely on wire rack.
