Coconut Cream Pie image

It is a very easy coconut pie to make and takes a short time to make it. It is moist and taste very good. The family loves it very much. I am the only one in my family that makes pies. I love baking so very much for my family.

Number Of Ingredients 9

3/4 c cane sugar
3 Tbsp all purpose flour
1 1/2 c coconut, flaked toasted and divided
1 Tbsp butter or margarine
3 c milk, 2%
1/2 tsp salt
3 eggs, beaten
1 1/2 tsp vanilla extract
1 9 inch pastry shell (baked)

Steps:

  • 1. In medium sauce pan, combine sugar, flour, and salt. Stir in milk; cook and stir over medium heat until thickend and bubbly.
  • 2. Reduce heat, cook and stir two minutes more. Remove from heat, stir 1 cup of hot mixture into beaten eggs and return all back into sauce pan, cook and stir over medium heat until nearly boiling (do not boil) Reduce heat and stir 2 minutes longer.
  • 3. Stir in 1 cup coconut, butter and vanilla extract. Pour into pie shell, and sprinkle with rest of the remaining coconut. Chill several hours before stirring. Refrigerate leftovers.
