3/4 c butter, softened
1/3 c confectioner's sugar
1-1/2 c all-purpose flour
1/2 c crisp rice cereal
FILLING:
4 eggs
1-1/2 c granulated sugar
1 c coconut, sweetened and flaked
1/3 c orange juice
1/4 c lemon juice
2 Tbsp lime juice
2 Tbsp all-purpose flour
3 tsp orange zest, grated
2 tsp lemon zest, grated
1-1/2 tsp lime zest, grated
confectioner's sugar

Steps:

  • 1. In small bowl, cream butter and confectioner's sugar until light and fluffy; gradually beat in flour until crumbly. Stir in cereal. Press into a greased 13" X 9" baking pan. Bake at 350° for 16-22 minutes or until lightly browned.
  • 2. Meanwhile, in large bowl, beat eggs, sugar, coconut, juices, flour and citrus zests at high speed until frothy. Pour over hot crust. Bake for 18-25 minutes or until lightly browned. Cool on wire rack. Dust with confectioner's sugar and cut into bars. Store in refrigerator.
