COCK--A--LEEKIE SOUP image

This is a Irish soup that was given to me by a friend. It has a wonderful flavor. COOKBOOK RECIPE

Number Of Ingredients 13

3 pound(s) chicken cut up
4 cup(s) water
1/2 cup(s) finely chopped carrots
1/2 cup(s) finely chopped celery
1/2 cup(s) finely chopped onion
2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1 - bay leaf
2 medium leeks thinly sliced
2 - potatoes peeled and diced
1/2 cup(s) barley
1/2 cup(s) pitted dried prunes snipped
2 cup(s) light cream

Steps:

  • Combine chicken, water, carrot, celery, onion, salt pepper, and bay leaf in a large saucepan Bring to a boil. reduce heat
  • Cover and simmer about 25 minutes or until chicken is tender
  • Remove chicken pieces from broth Skim off fat. When chicken is cool enough to handle remove from bone and discard skin and bone. Remove bay leaf and cut up chicken
  • Add chicken and remaining ingredients except cream to broth.
  • Cover and simmer until potatoes are tender about 20 minutes. Stir in cream. heat and serve.
