CLASSIC SOUTHERN MACARONI SALAD image

2 cups cooked macaroni, drained, rinsed, cooled
2 hard-cooked eggs, chopped
1/4 cup chopped celery
1/4 cup chopped onion, red or white
1/3 to 1/2 cup mayonnaise or salad dressing (dressing is sweeter; I prefer the more savory Mayo)
2 teaspoons sugar
2 teaspoons vinegar
1/2 teaspoon salt, or to taste
1/2 teaspoon prepared mustard
pepper, to taste
Chopped fresh parsley to garnish

Steps:

  • Cook Macaroni according to direction. It is important to drain them well and allow them to cool completely. Combine all ingredients using about 1/3 cup of mayonnaise and stir well. The pasta can soak up some of your dressing or mayo, so before serving you may want to add a little more. Taste and adjust seasonings. Cover and chill for several hours before serving. Garnish with fresh parsley if desired.
